Gluten-Free, Dairy-free Baked Oatmeal
In a season of meal prep, this gluten-free, dairy-free baked oatmeal is my go-to recipe that everyone in my family enjoys, and is very easy for me to make. I honestly feel like I am eating a dessert when I eat this, even without any added sugar in the recipe (the bananas and maple syrup add just enough sweetness to the recipe).
While it’s not needed, I love adding dairy-free semisweet chocolate chips to the top before I put this in the oven to bake. When it’s time to cut a piece, I like to drizzle a tablespoon of sunflower seed butter on top for some added flavor and protein!
This past season of life has been hectic taking care of my now four-year-old, Owen, and two-year-old Ben. As other moms will relate, I feel like I am constantly in the kitchen preparing meals and SO. MANY. SNACKS! This has made it a bit challenging to work on new recipes and then have time to take pictures and post on the blog. However, I have worked on a few new recipes and am excited to share one of them with you now!
My son, Ben, loves this recipe and asks for this for breakfast almost every morning. I appreciate that there is no added sugar in this recipe, and it keeps everyone satisfied and full for the morning.
A note on the oats: I use the Gluten-Free Organic Rolled Oats with Ancient Grains and Seeds mix from Trader Joe’s and I love the added texture of the chia seeds and other ingredients.
If you use something other than 9x13in. baking dish (like a 9x9in.), you will need to increase the bake time.
