Egg-Free, Dairy-Free Vanilla Cupcakes
I am happy to say that I spent all day this past Friday working on new recipes, practicing my food photography, and thinking of new posts. While I have a few posts coming down the pike, I wanted to share my vanilla cupcake recipe, as this has been requested by a few different people!
While I will always stand by the fact that chocolate is better than vanilla, I have to say these cupcakes are delicious (and definitely easy to make). My husband would disagree with me, though, and say that these vanilla cupcakes are his favorite. You should have seen his face light up when he got home from work on Friday and saw that I was working on these cupcakes. He grabbed two before he even said hello!
These allergy-friendly vanilla cupcakes are super simple to make and do not require any weird or expensive ingredients (especially if you already have non-dairy milk in the fridge).
Depending on your allergies, if you can eat egg (I technically can, but my brother cannot), I recommend my dairy-free meringue frosting, that does include egg. However, if you cannot have egg (like my brother) you can use my favorite egg-free, dairy-free buttercream frosting (shown in the pictures). Enjoy!
I would have done just about anything to have a resource like you, when I was raising you kids. Some light on the future ahead, someone to ask questions, not just about food, but how to help kids feel confident, strong and safe. Strange that this group would ignore that. However, knowing your blog is helping so many others, I would simply disregard and refocus your energy on the grateful ones.

I would completely agree, as a mother of children with food allergies, I have always wondered how they felt. You know first hand what they are going through. I don’t, i can only see the effects food have on them. I’m so glad to come across your blog and cant wait to try this recipe out. i’ve always struggled finding deserts that taste similar to ones from my childhood.

Might be a silly question BUT can use lactaid? I am TERRIBLE at these things and thought I would ask before destroying a batch!

You can definitely use lactaid! Unfortunately lactaid still makes me sick, so I usually use coconut milk or soy milk. But this should work with any non-dairy milk 🙂
I can’t wait to try making these. I have food allergies (mosty nuts and coconut) but my kids don’t. As i get older my allergies are getting worse. I love baked goods but HATE to have to make special food for me and “regular” food for everyone else.
I totally understand feeling like you have to make multiple batches of the same food depending on allergies. My husband does not have food allergies, but had to assume the same dietary restrictions at home to keep me safe. I try to work on recipes that I know he will enjoy too – and he loves these! We’ve made these for friends too, and they didn’t even realize that they were free of eggs, dairy, and nuts! 🙂
I am so sad to hear that you’ve received criticism of ANY kind from the food allergy community. You are LIVING this yourself, and clearly understand better than anyone what parents of food allergy kids are going through. My sincere belief is they every voice we have in this community is invaluable, and I thank you for yours! ? As far as these cupcakes… I’ve been searching high & low for a good vanilla one and can’t wait to try these- they look perfect! Hang in there & keep up the awesome work!

I love your blog! I think it’s ridiculous that people were upset that you are sharing allergy friendly recipes and don’t have children. What does it matter if you have kids or not? I’m grateful that you are sharing these recipes. I myself don’t have food allergies but my daughter does and I’m always looking for new things for her to try. She also has life threatening allergies so that makes it even more challenging. Thank you so much for all that you do here!

Hi! These sound delicious and I’m going to try them for my peanut free and egg free son! One question – he can do dairy, so can I do an even swap of regular milk for the non-dairy milk? Hi Jaime! I am so sorry I’m just getting back to you – I have been out of commision for health reasons, but am just getting back to the blog! In case you are still wondering, you absolutely can still use regular milk in this recipe.
I have to thank you for saving my toddler’s birthday. This was the only recipe that worked as written every other recipe I tried was a disaster. I’m about to pull the cupcakes out of the oven and they look gorgeous. Thanks for saving a very desperate and frustrated mom you’re awesome!

I am making this cake for Easter and I am so excited! I have a Granddaughter that has dairy allergy and as a result misses our on so much!!!
I just have one question, the picture shows cupcake wrappers but the recipe says to grease the cupcake pan. Can I use paper wrappers?
Yes, you can absolutely use wrappers and skip greasing the pan! (This also makes for an easier clean up ?). I’m so glad you are able to make this for your granddaughter! I hope you enjoy, and have a wonderful Easter.

I use all purpose flour for this recipe. I have never tried this recipe with coconut flour. If you do make this recipe with coconut flour, please let me know how it turns out!
Just stumbled across your blog and I’m loving it. My 18 year old daughter has had food allergies since she was 18 months old and she will be graduating HS in 3 days. Your info,experiences, and recipes are still valuable to everyone in the FA community,especially those young adults heading out on their own who now have to step outside their comfort zone! Whatever path our daughter takes, she will always have a safe place to come home to because FA are our way of life. Always share your experiences because it will help those who are newly diagnosed and don’t know what to do. Don’t get discouraged. Keep up the fantastic work.

Will this recipe work replacing the regular flour with a gluten free flour blend? Thanks, Leanne
I haven’t personally substituted with gluten-free flour, but I believe that it should work as long as you use the appropriate measurements per the gluten free flour!
