Top 8 Free Stuffed Peppers

My Top 8 Free Stuffed Peppers are free of ALL 8 major food allergens, but in my opinion, you wouldn’t even notice.

This recipe has many benefits to it. First, it’s a quick recipe, which I greatly appreciate. While I love to cook, I like to have dinners that are quick and simple. Second, this recipe is healthy. The hubby and I went on a beautiful hike today in Laguna Beach, and I came home hungry, but also wanting something healthy that wouldn’t undo all of those calories I burned on that giant hill coming back. Third, this recipe is pretty inexpensive. Payday isn’t till Friday, so I appreciate meals with cheap ingredients that I can find at the store.

So whether you are a family with allergic kiddos, a single allergic adult with an appetite, or a working wife like myself, this recipe is one to have on hand!

Top 8 Free Stuffed Peppers

Ingredients

4 bell peppers (my favorites are the red and green)

1 lb. ground turkey

2 tsp. chili powder

1 tsp. garlic salt

1/4 tsp. salt

1 4oz. can diced green chiles

1/2 cup black beans

1/2 cup corn

1 cup salsa

1/2 cup diced tomatoes

1/2 cup dairy-free cheese (or regular cheese if you can have it!)

1-2 green onions sliced

Instructions

Preheat oven to 350 degrees.

Wash peppers, cut tops off, and remove the ribs and seeds inside. Set peppers in baking dish.

Cook ground turkey on medium heat in a large pan. Add seasonings and green chiles.

Add beans, corn, and salsa once ground turkey is cooked all the way through.

Spoon the turkey mix into the four peppers.

Place 2 T. of diced peppers and 2 T. of cheese onto the top of each pepper.

Bake uncovered in oven for 35 minutes. Top with green onions, and enjoy!
