Gluten-Free, Vegan Raspberry Oat Bars
I am excited to share this delicious recipe for Gluten-Free, Vegan Raspberry Oat Bars with you! There are only 6 ingredients in the recipe, it is quick to make, and it is free from many major allergens (eggs, dairy, nuts, wheat, etc.).
Lately, I have been trying to adapt some of my favorite recipes to be gluten-free so I can make them for my nephew, Noah. Like me, Noah is allergic to peanuts, but he is also allergic to wheat and eggs. I make many recipes without eggs for my brother Henry, but wheat, I am learning, is quite the challenge!
These raspberry bars have been adapted from a recipe that my mom has for apricot bars. Her apricot bars are SO delicious, but they do have wheat in them. I took her recipe and made a couple of tweaks to the measurements (I had to lessen the amount of flour when I substituted her recipe with gluten-free flour). I have actually been working on this recipe for a month now, more due to the many interruptions of life with toddlers than the recipe being difficult to adapt. Three weeks ago we potty-trained our now three-year-old Owen, the week after our whole family got the flu, and last week we had daylight savings and we were all pretty exhausted by that point. Thankfully tonight I had a chance to make another batch to take pictures of and confirm all of the right measurements, and the bars came out great!
I would definitely encourage trying this with apricot jam, but I really do love the raspberry jam. I use the lower-sugar raspberry jam from Trader Joe’s, as well as their 1:1 gluten-free flour. I purchased the gluten-free oats from Sprouts, as well as the vegan Earth Balance butter sticks.
